Gluten-Free Banana Pear Muffins

I guess it’s safe to say, I love muffins! These gluten free muffins are DELICIOUS and make a great snack! Because sometimes I just want something sweet!!

Ingredients:

1 large banana

1 medium pear, peeled, cored, chopped

1/2 c pure maple syrup

1/2 c unsweetened almond milk

1/4 c olive oil

1 1/2 tsp pure vanilla extract

2 c gluten-free all-purpose flour

1 T gluten-free baking powder

1/2 tsp Himalayan salt

1. Preheat oven to 350 degrees and line cupcake pan with liners; lightly coat with spray.

2. Blend banana, pear, maple syrup, almond milk, oil, and vanilla.

3. Add flour, baking powder, and salt. Blend.

4. Divide batter evenly among muffin cups.

5. Bake for 20 to 23 minutes or until toothpick comes out clean.

6. When cool enough, transfer to cooling rack to cool completely.

7. Refrigerate in airtight container.
