Sweet Potato Pancakes
Are you ready to try the best pancakes ever and keep it CLEAN with your nutrition?!? Almost too good to be true!! They are perfectly portioned with a protein, veggie, and carb and can be eaten for breakfast, lunch, or dinner!! I prefer them for breakfast and to prep several batches/meals at once!
Makes 6 Servings
3 small-medium sized cooked sweet potatoes (I peel, cut, and steam)
4 cups cooked butternut squash (I use frozen)
2 cups spinach
12 eggs
6 tsp baking powder
6 tsp cinnamon
Blend all ingredients in a blender. Let sit for a little bit to thicken. Use as pancake batter. I use an electric griddle set at 350 degrees (make sure you heat it up before your first batch). Makes about 6 small pancakes per serving. I serve it with 1 tsp of peanut butter.
If you want to make one serving, you would use 1/2 cup cooked sweet potato, 1/2 cup cooked butternut squash, 1/2 cup spinach, 2 eggs, 1 tsp baking powder, and 1 tsp cinnamon.
