My Favorite Chicken Noodle Soup

If it’s the cold winter like it is where I am, this chicken noodle soup will be good to warm your body and soul! This is my favorite and it is SO EASY to make!! You can make it for dinner for the whole family or make it ahead of time for lunches. This recipe makes four servings.

Ingredients:

2 tsp. olive oil

1/2 cup chopped onion

2 cups sliced celery

4 cups low-sodium organic chicken broth

3 cups chopped rotisserie chicken breast

1 1/2 cups sliced carrots

1 tsp. dried oregano leaves

1/2 tsp. black pepper

1 cup dry whole wheat pasta (I use rotini)

Directions:

1 - Heat oil in large saucepan over medium heat.

2 - Add onion and celery; cook, stirring frequently, for 5 minutes, or until onion is translucent.

3 - Add broth, chicken, carrots, oregano, and pepper. Bring to a boil.

4 - Add pasta, reduce heat to low; gently boil for 10 minutes.
