Oatmeal Muffins

Need a quick, easy, on-the-go breakfast idea?!? These oatmeal muffins are becoming a favorite of mine and they are so easy to prep ahead of time! I’ve been making four servings at a time!

Oatmeal Muffins (makes 4 servings):

8 eggs

1 c GF rolled oats

4 c spinach

4 tsp GF baking powder

4 tsp cinnamon

Blend and pour into muffin tins sprayed with EVOO spray. Bake at 350 for 15 minutes.

Each serving is 3 muffins. I love having them with peanut butter and fruit! ENJOY!!
