Roasted Brussels Sprouts

I will say this is one vegetable the humans I love so much and live in my home will not eat! But I have discovered in recent years I LOVE them!! So I made them for my meal prep this week and it was SO EASY!! I may even add these to my Thanksgiving menu!! I hope you enjoy this recipe as much as I do, and maybe you can get your family to enjoy it, too! :-)

Ingredients:

  • 2 pounds Brussels sprouts

  • 2 cloves minced garlic

  • 1/3 cup olive oil

  • 2 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp salt (more to taste if needed)

Instructions:

  1. Preheat oven to 400 degrees F

  2. Cut Brussels sprouts into halves and place in a large bowl

  3. Add minced garlic, olive oil, cumin, garlic powder, and salt to bowl and stir to coat

  4. Line a large sheet pan with foil

  5. Pour veggies onto pan and roast for 30 minutes (stirring halfway)
